To make the base:
1.Crush the biscuits into crumbs, do this by placing the biscuits inside a freezer bag and twist the top so there is no air in the bag and then hit them with a rolling pin. Take care not to hit your fingers!

2.Melt the butter in a saucepan over a gentle heat; you don't want it to burn.
3.When the butter is melted stir in the crushed biscuits.
4.Push the mixture into the bottom of a pie or cake tin and refrigerate for 15mins.
To make the filling:
1.Put the double cream in a mixing bowl and add the cream cheese. Whisk until thick and creamy.
2.Stir in the icing sugar and vanilla essence until your mixture is smooth and thick.
3.Pour the mixture on top of the biscuit base and spread evenly.
4.Leave to set in the fridge overnight until the topping is firm.
To decorate:
Once your cheesecake has set, thinly slice some strawberries to lay on the top for decoration. You can decorate your cheesecake in all sorts of pretty patterns. Be creative!
